Scratch Food Passionately Prepared
Adam Foti - Chef/Owner
Food has been a passion of mine from an early age. I love to create. It's so fulfilling to start with raw materials and finish with beautiful product. I started my career cooking in my family’s pizza shop and various locations in the capital district back in the late 80's.
In the mid 90's I took my creative passions in a different direction and spent over 20 years working in fashion merchandising, design + trend direction with some of the largest specialty retailers + wholesalers in the US like: Gap, Inc., Ralph Lauren, American Eagle and Guess? Inc.
In the early 2000's I returned to my passion for food and created PDT while finishing my culinary degree and earning a BBA in Hospitality Management.

Hi! I’m Carly, aka the Health Anchor. .
I am passionate about a few things, food and family are at the top of the list. I believe in eating whole foods to nourish your body, and not depriving yourself from things that you crave (within reason) which I call intuitive eating. I believe that nutrition is much more than just what you are eating, but also how you are eating, when you are eating and why you are eating. I LOVE FOOD. This love of food, fitness and nutrition started at a young age; with a little help from my family as we gathered around our dinner table. The importance of family and food continues on as my husband and I raise our daughter to enjoy the same family recipes we grew up with.
Ready for my credentials? First, I graduated with a B.S. in Dietetics with a minor in personal training from SUNY Oneonta. Then, I completed the infamous Dietetic Internship at Keene State College with 1200 hours of supervised practice before sitting for a nationally recognized credentialing exam. Finally, I completed a Master’s of Science degree in Nutrition from Stony Brook University.
I moved to the Capital District from Northern New York after the internship and started my RD (Registered Dietitian) career as a Wellness Director. For the last 5 years I’ve been working in the clinical field, and now hold a Clinical Nutrition Manager position.
Working with me will involve conversations, counseling, advocation, and adherence to help you along your personal health journey. My goal is to help you Eat to Meet your Goals.
I can’t wait to work with you! -Carly
